After spending time in LA, I became obsessed with the concept of a healthy breakfast muffin.
I think my obsession begin whilst sipping Ethiopian pour-over coffee (the best according to the ironically bespectacled barrister) and eating a 9-grain muffin at hipster LA coffee joint Commissary. http://coffeecommissary.com/ There was just something about that moment, in the sun, coffee and muffin in hand that felt pretty damn awesome. Back in Sydney, I was determined to recreate the moment and hit the kitchen armed with every healthy flour I could think off. After a few attempts – I most enjoyed this combo.
- Ground flaxseed
- Chia seeds
- Baking powder
- 1/4 cup coconut oil
- 1/2 cup Blueberries
- 1 small mashed banana
- 1 Egg
- Stevia (or sweetener of choice)
* Play around with the amounts of ingredients until you get a good consistency mixture. I prefer small amounts of dry ingredients for a dense muffin.
* Instead of Stevia you could also use Dates (boil down chopped Medjool dates) or apple puree.
So peeps – have you little moment in the sun! Grab a coffee and enjoy every once in a while as an alternative to your usual smoothie / oats / muesli combo. Ebony x
